Great Lakes Trading Granola with Dried Fruit

Delicious fruity and crunchy granola. great as a snack or served with yogurt.
  • 5 ½ cups old fashioned oats
  • 1 ½ cups pecan pieces
  • 1 ½ cups sliced almonds
  • 1 cup sweetened flaked coconut
  • ½ cup wheat germ
  • ½ cup packed brown sugar
  • 1 T ground cinnamon
  • ¼ teas ground nutmeg
  • ¼ teas allspice
  • 1/3 cup orange juice
  • 1/3 cup apple juice
  • 6 T canola oil
  • ½ cup pure maple syrup
  • 1 T vanilla extract
  • 3 cups assorted Great Lakes Int’l Trading dried fruit (such as cranberries, cherries, blueberries, diced dates, diced apricots, diced prunes, diced mango and dried strawberries)
  1. Preheat oven to 300 degrees F.
  2. Spray 2 rimmed baking sheets (15x11) with nonstick spray.
  3. Mix oats, pecans, almonds, coconut, brown sugar, wheat germ, cinnamon, nutmeg, and allspice in a large bowl.
  4. Bring orange juice, apple juice, canola oil and maple syrup to boil in a small saucepan.
  5. Remove from heat and stir in vanilla.
  6. Drizzle orange juice mixture over dry ingredients; toss to coat.
  7. Divide granola between prepared sheets, spreading evenly.
  8. Bake granola until golden brown, stirring occasionally (important), about 50 minutes.
  9. Cool completely .
  10. Place granola in a large bowl
  11. Thoroughly mix in 3 cups of Great Lakes Int’l Trading dried fruit.
  12. Store granola in an airtight container.
