Sun Dried Tomato Meatloaf

A tasty meatloaf enhanced with the tomatoey goodness of sun dried tomatoes.
Ingredients
  • 1 cup Great Lakes Sun Dried Tomatoes, Chopped
  • ½ cup Onion, chopped
  • ½ cup Green Pepper, chopped
  • 2 Eggs
  • 1/2 cup Milk
  • 3/4 cup Quick Oats
  • 2 teaspoons Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 ½ pounds Ground Beef
Instructions
  1. In a large bowl whisk the eggs and milk together.
  2. Stir in the oats, tomatoes, green pepper and onion.
  3. Sprinkle with the seasonings.
  4. Crumble the ground beef on top and mix well with the other ingredients.
  5. Shape into a loaf and place in an ungreased loaf pan or baking dish.
  6. Bake at 350 degrees for 1 hour or until it’s not pink in the center.
  7. Drain and serve.
