Crispy Energy Bars
  • ½ cup Sesame Seeds
  • ½ cup Dry Roasted Sunflower Seeds
  • 3/4 cup Chopped Dates
  • ¾ cup Great Lakes Dried Apricots
  • 1/2 cup Great Lakes Dried Cherries
  • ½ cup Semisweet Chocolate Chips
  • 1 cup Old Fashioned Rolled Oats
  • 6 cups Crisp Rice Cereal
  • 1 cup Honey
  • 1 ½ cups Crunchy Peanut Butter
  • ¾ cup Powdered Milk
  • 1 ½ teaspoons Vanilla Extract
  1. Combine sesame seeds and sunflower seeds in a dry skillet over medium heat. Cook, stirring until lightly toasted. Set aside to cool. Combine dates, apricots, cherries and chocolate chips in the bowl of a food processor. Pulse to chop until small but not pasty. Transfer to a large bowl and mix with oats and crisp rice cereal. Stir in the cooled toasted seeds. In a small glass bowl, mix together peanut butter and honey. Heat in a microwave until bubbly. Stir in the powdered milk and vanilla. Pour peanut butter mixture over the bowl of cereal and goodies and mix until everything is evenly coated. Press mixture firmly into a greased 10 x 15 inch pan. (I used a 9.75 x 13.25 inch baking dish and mine were very thick) Allow to cool completely. Cut into squares. Makes 24.
