- 4 Boneless Skinless Chicken Breast halves
- 8 slices Turkey bacon, halved
- ⅔ cups Great Lakes Dried Cherries, snipped
- 3 Tablespoons Honey Mustard
- 1 cup Panko Bread Crumbs
- ½ teaspoon Dried Thyme leaves
- Pound chicken until ¼ – ½ inch thick. Fry the bacon until lightly browned. Lay the bacon on the chicken. In a small bowl, combine cherries and half of the mustard. Divide the cherry mixture evenly among the chicken. Roll up each piece of chicken. Brush the rolls with remaining mustard. In a shallow dish combine bread crumbs and thyme. Roll chicken in crumb mixture to coat. Place seam side down in a greased baking pan. Lightly spray tops with cooking spray.
