Dried Cranberry Apple Cole Slaw

Ingredients
- 6-8 cups Shredded Cabbage (or 1 Lb. bag)
- 2 Carrots, grated
- 1 cup Great Lakes Dried Cranberries
- 4 Green Onions, finely chopped
- 1 Red Bell Pepper, finely chopped
- 1 Unpeeled Red Apple, cored and diced
- 1 Unpeeled Granny Smith Apple, cored and diced
- 1 cup Mayonnaise
- ½ cup Brown Sugar
- 4 tablespoons Lemon Juice, divided
Instructions
- Core and dice apples.
- Place apples in a large bowl and stir in 2 tablespoons of lemon juice to keep them from turning brown.
- Add the shredded cabbage, carrots, green onions, red pepper and cranberries.
- In a small bowl mix together mayonnaise, brown sugar and 2 tablespoons lemon juice.
- Pour over salad, mix and serve.
