Cucumber Dried Cherry Salad
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Red Wine Vinegar
  • 1 teaspoon Apple Cider Vinegar
  • 1 Tablespoon Dried Parsley
  • 1/2 cup Great Lakes Dried Cherries, cut in half
  • 1 15 ounce can Chick Peas, drained and rinsed
  • 1 Seedless Cucumber, cut into chunks
  • 4 ounces Mozzarella cheese, cut into small chunks
  • Salt and pepper to taste
  1. Whisk together the olive oil and vinegar, parsley, salt and pepper. Stir in the cherries and set aside to rest while you cut up the cucumbers and cheese. Place the cucumber, chick peas and cheese in a bowl. Pour the cherry mixture on it. Stir until well blended. Add more salt and pepper if desired.
