The Michigan Red Tart Cherry, (Prunus cerasus, Montmorency variety), is often called the "pie cherry" because it's special tart flavor helps to create such a wonderful cherry pie. Commercial production of red tart cherries requires a very unusual blend of environmental conditions: well-drained sandy soils, cool spring weather to restrain the blooming cycle, and consistent moisture replenishment. The northwestern lower peninsula of Michigan manifests cherry growing conditions that are just perfect. Lake Michigan, the freshwater sea that forms Michigan's western shore, retards orchard development in spring; provides cooling rains in summer; and deposits protective snows in winter.
